PINK BEET HUMMUS

VERSION EN ESPANOL ABAJO

​When I was a little girl I used to hate beetroots because there was this aweful dish in kindergarten that they made us eat and I absolutely did not like it. However the older I become the more adventurous I get in the kitchen and since I know beets have lots of health benefits I decided to reintroduce this powerful food back into my diet.

Beetroots can help lower blood pressure, boost stamina, have anti-cancer properties, support the liver and are rich in vitamins, minerals and fibre. Just know that it is also the vegetable with the highest sugar content so if you have problems with sugar you might have to go easy on the beets. 
But don't worry the recipe that I am sharing today only includes a little bit of beet which is totally sufficient for the strong pink color and does not at all spike blood sugar thanks to all the other amazing nutrient-dense ingredients in this pink hummus.

PINK BEET HUMMUS
 
Prep time                         10 mins                     
Total time                         10 mins
 
Serves: around 500g of hummus 
Ingredients
400g cooked chickpeas, if canned drain and wash before using
3 tbsp olive oil
2 tbsp tahini
juice of 2 limes
1 thick slice of beetroot without skin
1/2 garlic clove, peeled and roasted for some minutes
1 tsp cumin
pinch of sea salt
1/4 cup water

Instructions
  1. Simply place all of the ingredients into a food processor and pulse until smooth and creamy. You can try doing it in a high speed blender as well but you might need to add more water.
  2. Enjoy with vegetable sticks, on bread, in bowl and salads.

​HUMMUS ROSA CON BETABEL

Tiempo prep.:                   10 minutos
Tiempo total:                    10 minutos
 
​Rinde: alrededor de 500g de hummus
Ingredientes
400g garbanzos cocidos, si son de lata drenalos y lavalos de antemano
3 cdas aceite de oliva
2 cdas tahini
Jugo de 2 limones
1 rebanada gruesa de betabel sin piel
1/2 ajo sin piel, rostizalo durante unos minutos antes de usarlo
1 cdita comino
pizca de sal
1/4 taza de agua

Instrucciones
  1. Pon todos los ingredientes en un procesador de alimentos y procesa hasta que se haga cremoso. También puedes intentar hacerlo en una licuadora de alta velocidad pero puede ser que vas a necesitar mas agua.
  2. Disfruta con sticks de verduras, en pan, en bowls y ensaladas
