They are one of the best sources of vitamin A; a large one contains more than 100 percent of the daily recommended intake, and it is linked to anti-aging benefits, cancer prevention and the maintenance of good eyesight. And imagine that sweet potatoes are just one of the ingredients of this incredible dish, we didn't even talk about the benefits of the protein rich quinoa, avocado and the other vegetables that comprise this wholesome meal. Con un poco de preparación, es facil de hacerlo y no se necesita nada de equipo especial. Les perece bien? Empezarémos entonces. De hecho nunca comí camote antes de hacerme vegana y mudarme a Mexico pero la verdad es que estoy super feliz que ahora es parte esencial de mi dieta. Camotes son super satisfactorios, dulces y salados al mismo tiempo y llenos de vitamina A, B5, B6, B2, tiamina, niacina y carotenoides. Son una de las mejores fuentes de vitamina A que existe; un camote grande contiene mas que 100 veces la dosis recomendada diaria; y son asociados con beneficios contra el envejecimiento, prevención de cancer y mantenimiento de una buena vista.
