CREAMY PESTO PASTA FOR TWO

Pasta and pesto are made for each other don't you think?
I definitely can't resist this delicious pesto pasta and the good news is that it is super healthy, filling and full of nutrients. You can also substitute the pasta for zoodles (zucchini noodles) and make it a low carb recipe if that is what you desire.

This is the perfect recipe for a romantic dinner for two or double the recipe and make it for your friends. Everybody is going to love this pasta, I promise.

CREAMY PESTO PASTA FOR TWO
 
Prep time          20 mins       
Cooking time   20 mins                                       
Total time         40 mins            
 
Serves: 2 portions
Ingredients
40g red onion, cut into cubes
1 tbsp extra virgin olive oil
100g mushrooms, cleaned 
100g broccoli
3/4 cup frozen peas
6 tbsp pesto (check out the recipe here www.myfruitsoflife.com/sauces/basic-basil-almond-pesto)
200 gluten free pasta (dry weight)
brazil nut parmesan (recipe coming soon) or nutritional yeast for decoration

Instructions
1. Fill a sauce pan with water and bring to aboil. 
2. Put pasta inside the water and cook until soft to your liking. 
3. Meanwhile, cut onion, mushrooms and broccoli and set aside. 
4. Heat a large pan over medium heat and add olive oil, when hot add onion and sauté for about 1 minute. 
5. Add mushrooms, broccoli and frozen peas and sauté for about 5 minutes, stirring constantly. 
6. Add pasta and pesto to the pan and combine everything. Let cook for about 5 more minutes. You can add more pesto if you like. 
7. Serve with brazil nut parmesan (recipe coming soon) or nutritional yeast. Enjoy!

Pasta y pesto - hechos el uno para el otro, no creen?
Yo definitivamente no puedo resistir a esta deliciosa pasta y la buena noticia es que es super saludable, llenadora y llena de nutrientes. Tambien lo pueden hacer con fideos de calabaza (zoodles) si desean algo low carb.

PASTA PESTO CREMOSA PARA DOS

Tiempo prep.: 20 minutos
Tiempo cocinar: 20 minutos
Tiempo total: 40 minutes

 
​Rinde: 2 porciones
Ingredientes
40g cebolla morada, picada en cubos
1 tbsp aceite de oliva extra virgen
100g champiñones, limpiados
3/4 taza chicharos congelados
​100g brocoli
6 cdas pesto (www.myfruitsoflife.com/sauces/basic-basil-almond-pesto)
190g pasta sin gluten (peso seco)
parmesano de nuez de brazil o levadura nutricional

Instrucciones
1. Llena una olla con agua y haz que hierva.
2. Agrega la pasta a la olla y cocina hasta que sea lo suficientemente blanda de tu agrado. 
3. Mientras, corta cebolla, champiñones y brocoli y guardalos en un lado.
4. Calienta un sartén grande a fuego mediano, agrega el aceite de oliva y dejarlo calentarse.
5. Una vez caliente, añade la cebolla y saltéala durante alrededor de un minuto. 
6. Agrega los champiñones, el brocoli y los chicharos y saltéalo durante 5 minutos mas, removiendo constantemente. 
7. Luego añade la pasta y el pesto al sarten, combina todo muy bien y deja cocinar para 5 minutos mas. Puedes agregar mas pesto si gustas.
​8. Sirvelo con parmesano de nuez de la India o levadura nutricional. Provecho!

Why do I always see these things when I am really starving. The nearest grocery store is four hours away from here. I am not sure how I can get there by foot! My car is broken. It's terrible. I know I should be smart enough to be able to fix my own car but I don't have the tools. Later I am going to look around if I have any friendly neighbors here. I really want to fix my car so I can finally drive away and get something to eat. This should not continue longer.
