I know, I already said in my last post that it is very very hot here in Mexico, but I am going to say it again, it is very very HOT! :D So I thought for a change, I would share a recipe of a refreshing, filling and super delicious spring salad (I can't believe I have never shared a salad recipe before and this is a vegan blog...WHAT!!!). It is super easy to make and anything else than boring. So let's make it!
