RAW VEGAN SNICKERS

​Snickers, a classic that pleases everyone. It is super delicious and when made raw vegan, it is also much healthier and can be enjoyed without "bad conscience". Therefore it is the perfect treat for Christmas, to share with your family and friends. So let's get right into it because it is almost Christmas and we still have some work to do ;)

RAW VEGAN SNICKERS

Serves: 16 snickers squares
Ingredients
Base:
1 1/2 cup oats
1 cup amaranth
2 1/2 tbsp agave honey
6 tbsp water

Filling:
2 1/2 cups peanuts
3 tbsp agave honey (if the coconut cream is not sweetened, otherwise omit)
1/2 cup natural coconut cream (from a can of coconut milk; let sit in the fridge over night and take 1/2 cup of the hardened part)
pinch of salt

Date caramel:
1 cup dates, pitted
3/4 cup water

Chocolate:
1 dark chocolate bar

Instructions
  1. For the base, put the oats and the amaranth in a blender and pulverize. Add the other base ingredients and pulse until the dough is sticky.
  2. Take out a squared brownie tin (20 x 20cm) and press the base dough onto the bottom of the tin. Store in the freezer while you prepare the rest.
  3. For the filling, roast the peanuts in a pan or in the oven, then put about 2 cups of them into the blender and set 1/2 cup aside for decorating. Pulverize the peanuts in the blender, add the other filling ingredients and blend until creamy. 
  4. Take the brownie tin out of the freezer and put the filling on top of the base. Now sprinkle the other 1/2 cup of peanuts on top of the filling and press down with your hands. Put the tin back into the freezer.
  5. For the date caramel, blend dates with water until creamy. Now spread the date caramel on top of the filling and let the snickers freeze for about 2 hours or until firm.
  6. Meanwhile, melt your chocolate on a double boiler.
  7. Take the snickers out of the freezer and let them thaw until you can cut them into squares. Top each snickers square with your melted chocolate and put back in the freezer for about 10 minutes.
  8. Take out of the freezer about 20 minutes before enjoying them.
