HEALTHY PEANUT-BUTTER OAT COOKIES

This morning I was seriously craving some cookies and since I like to listen to my body, I thought well, I am going to make cookies for breakfast then. The thing with cookies is that they have a bad reputation because most of the conventional ones are loaded with refined sugar, trans-fats, artificial flavourings, colouring etc. But hey let me tell you, it is actually possible to make super healthy, nourishing and delicious cookies that don't contain any of that crap. How? Well, continue reading below.

These cookies only contain 5 simple ingredients and are perfect for a healthy breakfast, a snack or as a dessert. You could also give them to your kids for school so that they can share them with their friends. That way they will obtain lots of healthy fiber, protein, healthy fats and complex carbohidrates all while thinking that they are eating a "normal" cookie. 

To sum these cookies up, they are:
healthy
vegan
flourless
rich in fiber
high in protein
delicious
satisfying

HEALTHY PEANUT BUTTER OAT COOKIES
 
Prep time                         10 mins                     
Baking time                     12 mins
Total time                         22 mins
 
Serves: 11 cookies
Ingredients
2 very ripe bananas
2 tbsp peanut butter
1 1/2 cup oats
1 tsp pure vainilla extract
1/2 cup dark chocolate chips (or just cut up a bar of dark chocolate)

Instructions
  1. Preheat  the oven to 180C and spray a baking tray with a little bit of non-stick spray (if you have a baking mat like me you don't need non-stick spray)
  2. Peel bananas, add them to a bowl and mash them with a fork.
  3. Mix in the peanut-butter, vainilla extract and oats. Stir to combine everything.
  4. Finally add the dark chocolate chips and stir carefully to combine.
  5. Now take a spoon and add small portions of the dough (about 2 tbsp for 1 cookie) to the baking tray. 
  6. Shape them into nice little circles and bake for 12-15 minutes.
  7. Enjoy!

GALLETAS SALUDABLES DE AVENA C/CREMA DE MANI 

Tiempo prep.:                   10 minutos
Tiempo en horno:           12 minutos
Tiempo total:                    22 minutos

 
​Rinde: 11 galletas
Ingredientes
2 platanos maduros
2 cdas de crema de mani
1 1/2 taza de avena
1 cdita extracto de vainilla puro
​1/2 taza chispas de chocolate obscuro 

Instrucciones
  1. Precalienta el horno a 180C, toma una charola para hornear y ponle spray anti-adherente (si tienes un baking mat como yo, no necesitas spray anti-adherente)
  2. Pela los platanos, ponlos en un bol y machacealos con un tenedor. 
  3. Añade la crema de mani, el extracto de vainilla y la avena y remuevelo muy bien. 
  4. Ahora agrega las chispas de chocolate y mezcla todo con ciudado. 
  5. Toma una cuchara y añade pequeñas porciones de masa (aprox. 2 cdas/galleta) a la charola para hornear.
  6. Dales la forma de galleta y hornealas durante 12-15 minutos.
  7. Disfruta.
