Carrots are one of my favorite things to put into desserts because they are colorful, healthy, sweet and combine excellent with spices like cinnamon, ground ginger and nutmeg.
That's why this weekend I decided to give this delicious nutritious carrot bread a try and it turned out amazing. Read on if you want to try it yourself.
This bread is perfect for a little sweet craving, for breakfast and to share with family and friends. You can top it off with fruits, nut butter, maple or anything else that your heart desires. If you want it to be gluten free you can also switch the whole wheat flour for gluten-free flour and it should work fine.

Serves: 1 x 23cm carrot bread
2 cups (280 g) whole wheat flour
1/3 cup (75 g) monk fruit sweetener
2 teaspoons cinnamon
2 teaspoons baking powder
pinch of salt
1/2 cup (113 ml) unsweetened almond milk
1/4 cup (56 ml) warmed coconut oil or organic canola oil
2 medium bananas (ripe)
3 big carrots
3/4 cup (86 g) chopped walnuts
