ESPANOL ABAJO It's september Amigos! So take out your red, white, green flags and get ready to celebrate the Mexican Independence. Of course there is no fiesta in Mexico without lots of great Mexican food. The most popular dish is the Chile en Nogada which you can find in every restaurant during september (of course also in vegamomx). So that's why I thought it is also time to make a Nogada cake, I mean every celebration needs cake right? So lets dive into it. If you have never heard of the popular Mexican dish Chile en Nogada, let me describe it for you. It is a filled poblano chile (looks somewhat like a filled green bell pepper) with a special white sauce, the Nogada, that is normally made out of nuts, cinnamon, jerez (a spanish liquor) and cream cheese. The filling contains different things but normally there is apples and peaches involved and the chile is topped with pomegranate and parsley. So that is the ingredients we are going for in this cake and it is also obviously vegan, gluten free and refined sugar free. FESTIVE NOGADA CAKE (VEGAN; GLUTEN FREE) Prep time 25 mins Freezer time 6 hours Total time 6 h 25 mins Serves: 1 x 23cm (9") cake Ingredients Crust: 1 cup shredded almonds (85g) 1/2 cup sunflower seeds (70g) 1/2 cup cashews (70g) 1 cup raisins 1/4 tsp cinnamon 2 tbsp water Filling: 1 cup cashews (150g, soaked and drained) 1 cup shredded almonds (85g, soaked and drained) 1/2 cup walnuts (55g, soaked and drained) 290g tofu, pressed 3 tsp jerez 1 tsp vanilla extract 1 tsp nutritional yeast 1 tbsp cinnamon 6 tbsp agave honey 70ml unsweetened almond milk 10g cacao butter (melted) or 1 tbsp coconut oil (liquified) 40g pomegranate 70g peach Tofu Cream: 115g tofu, pressed 1/2 cup soy cream or full fat coconut cream/milk 1 tbsp coconut oil 1 tbsp agave honey 1 tsp vanilla extract Pomegranate, mint and walnuts to decorate Instructions
