RAWVEGAN BROWNIES

Hey everyone! I'm back. I have been absent for some time due to all the work I put into my restaurant (2 years of very hard work). But I am back now and ready to share lots of delicious vegan recipes.

I thought I would start with one of my all time favourites; rawvegan brownies. Who doesn't like brownies right? So, if you are a brownie fanatic like me you have to try this recipe because on top of delicious it is also healthy, WIN WIN!

It all starts with a food processor and only a few ingredients. Super easy, fast and the only utensils required are a high speed blender or food processor, a bowl, a brownie tin, a pot and a spoon.

I like to have them as a pic-me-up afternoon snack, dessert or as part of my breakfast. Actually, any time of the day is perfect for some raw vegan brownies. 

So without further ado, let me introduce you to these babies.

​RAWVEGAN BROWNIES

 
Prep time                               Time in the freezer                              Total time
20 mins                                  25 mins                                                 45 mins
 
Serves: 9
Ingredients
1/2 cup almonds (50g)
1/2 cup almond flour (40g)
1/4 cup (30 g) hazelnuts
1 cup glutenfree oatmeal (100g; or sub sunflower seeds)
1 cup amaranth (30g)
1/2 cup raw cocoa powder (60g)
1 cup dates (70g, previously soaked 20mins in filtered water)
1 tbsp almond butter
1/2 cup of the soaking water (120ml)

Topping:
100ml coconut oil 
1/2 cup cocoa powder (60g)
20g natural stevia powder (or sub other sweetener of your liking)
handful of hemp seeds or hazelnuts to decorate

Instructions
  1. Put almonds, almond flour, hazelnuts, oatmeal, and amaranth in high speed blender or food processor and blend well. You should get a flourlike mixture. 
  2. Drain dates and add them to the food processor along with cocoa powder. Process well and finally add the almond butter and soaking water and process again. You should get a sticky, dark brown dough. 
  3. Transfer the dough into a brownie tin and press down with your hands until it is spread out equally. You can use parchment paper to avoid that it sticks to the tin if you want. 
  4. Transfer to freezer for 20 mins and prepare topping in the meantime. 
  5. Over a double boiler, slightly heat coconut oil just it starts to melt. Turn off heat and add cocoa powder and sweetener. 
  6. Take brownies out of the freezer and cut into 9 pieces. Top with chocolate and add hemp seeds. Put into the freezer for 5 more minutes.  
  7. Enjoy!
