ALMOND BUTTER CHOCOLATE COOKIES IN 30 MINUTES (GLUTENFREE; VEGAN)

Ok so it is about time for some cookies, don't you think?
These almond butter chocolate cookies are my favourite treat to satisfy a little chocolate craving and you don't even have to feel guilty about having one or two, awesome right?

​Of course everything sweet should be consumed in moderation, but if you are in the mood for a little treat that apart from being delicious also contains some nutrients, this is the cookie for you.

If you are feeling generous, make these delicious chocolate cookies for a friend, it only takes 30 minutes and you can enjoy them together with a glass of fresh and cold coconut milk. Sounds pretty good if you ask me.

ALMOND BUTTER CHOCOLATE COOKIES 

Prep. Time: 15 minutes
Baking Time: 15 minutes
Total Time: 30 minutes

 
​Makes: about 12 cookies 
Ingredients
Dry
200g gluten free flour mix (like clementinaglutenfree.com/#productos)
70g coconut sugar
1 tsp baking powder
3 tbsp cocoa powder, unsweetened

Wet
1/3 cup coconut oil, liquified
1 tsp pure vanilla extract
1/4 cup almond butter
1/2 cup + 3 tbsp almond milk
sliced almonds 
non-stick spray

Instructions
  1. Preheat oven to 175C (350F).
  2. In a medium sized bowl, add all the dry ingredients and stir. 
  3. Blend almond butter with almond milk and add to the bowl with the dry ingredients. 
  4. Also add coconut oil and vanilla extract to the bowl and knead with your hands. The dough should be quite firm but moldable. (see picture above) 
  5. Transfer the dough to the fridge for about 5 minutes while you prepare a cookie tray with non-stick spray. 
  6. Take the bowl out of the fridge, form balls of about 40g each and put them on the cookie tray. 
  7. Press the dough balls down with your hands and form cookies. 
  8. Put some sliced almonds on top of each cookie and bake for about 15 minutes. 
  9. Take out of the oven, let cool and enjoy with a cold glass of coconut milk.

Bueno pues ya es hora para unas galletas, no creen?
Estas galletas de crema de almendras y chocolate son perfectas para ese antojito de chocolate y ni siquiera se tienen que sentir culpable de comer una o dos. 
Obviamente todo lo dulce se debe disfrutar en moderacion, pero si tienen ganas de algo dulce que aparte de ser delicioso tambien contiene algunos nutrientes, estas son las galletas para ustedes.

Si se sienten generosos, hagan estas galletas deliciosas para un amigo, solo toma 30 minutos y las pueden disfrutar juntos con unos vasos de leche de coco frio. Suena bastante bien, verdad? 

Para resumir estas galletitas, son:

GALLETAS DE CREMA DE ALMENDRA Y CHOCOLATE

Tiempo prep.: 15 minutos
Tiempo hornear: 15 minutos
Tiempo total: 30 minutes

 
​Rinde: alrededor de 12 galletas
Ingredientes
Secos
200g harina sin gluten (como clementinaglutenfree.com/#productos)
70g azucar de coco
1 cdita polvo para hornear
3 cdas cacao en polvo, sin azucar

Humedos
1/3 taza aceite de coco, liquido
1 cdita extracto de vainilla 
1/4 taza crema de almendra 
1/2 taza + 3 cdas leche de almendras
almendras fileteadas
spray anti-adherente

Instrucciones
  1. Calienta el horno a 175C (350F).
  2. En un bol mediano, agrega todos los ingredientes secos y remuevelos. 
  3. Licúa la crema de almendras con la leche de almendras y añadelo al bol con los ingredientes secos. 
  4. También agrega el aceite de coco y el extracto de vainilla al bol y amasalo con tus manos. La masa debería estar bastante firme pero formable (ve la foto de arriba).
  5. Transfiere la masa al refrigerados para 5 minutos, mientras prepara una charola para galletas con el spray anti-adherente. 
  6. Quita el bol del refrigerador, forma pequeños bolitas de 40g cada uno y ponlos en la charola. 
  7. Prsiona las bolitas de masa con tus manos y forma galletas. 
  8. Coloca unas almendras fileteadas encima de cada galleta y hornealas para alrededor de 15 minutos. 
  9. Quita la charola del horno, deja enfriar y disfruta con un vaso de leche de coco frio.
