Carrots are one of my favorite things to put into desserts because they are colorful, healthy, sweet and combine excellent with spices like cinnamon, ground ginger and nutmeg.

This cake is my boyfriends favourite and since it was his birthday not long ago, I decided to make it for him as a surprise. This morning I was seriously craving some cookies and since I like to listen to my body, I thought well, I am going to make cookies for breakfast then.
