VEGAN GOAT CHEESE WITH HERBS

VERSION EN ESPANOL ABAJO

If you are a "cheesy" person, I have a surprise for you. ;) This super delicious, healthy vegan goat cheese, without a drop of goats milk. Don't believe that's going to work out? Well, let me convince you otherwise.

Besides being cruelty-free, the cheese is also super healthy and obviously delicious. I love having it on homemade crackers (recipe coming soon), bread and with pasta to give it an extra creaminess.

VEGAN GOAT CHEESE WITH HERBS
 
Prep time               15 mins

Total time               15 h 15 mins 
 
Serves: 1 queso de 300g
Ingredients
1 cup cashews (150g), soaked overnight, drained and rinsed
1/2 cup macadamia (50g), soaked overnight, drained and rinsed
80ml lemon juice 
3 tbsp coconut oil
2 tbsp olive oil
1 1/4 tsp miso
1 tbsp nutricional yeast
2 1/2 tbsp water
1/2 tsp sea salt
mixed herbs to decorate

Instructions
  1. In the blender or food processor, combine and pulverize all the ingredients except the mixed herbs. Blend until creamy, taking breaks to scrape the sides of the blender to ensure everything is combined.
  2. Place a strainer over a bowl and line it with cheesecloth (a nut milk bag works as well). Spoon cashew mixture into the center of the cheesecloth, fold sides of the cloth over the cheese and form into a 6-inch spherical loaf. Let it stand at room tremperature for 12 hours. 
  3. Discard excess water and chill in the fridge for at least 3 hours.
  4. Unwrap the cheese and place it onto a plate. Sprinkle with herbs of your liking from all sides.
  5. Enjoy with some homemade crackers (recipe coming soon), on bread or pasta.



QUESO DE CABRA VEGANO 

Si les gusta el queso, les tengo una sorpresa; este queso de cabra delicioso, vegano y hecho sin absolutamente ninguna gota de leche de cabra. No me creen que eso funciona? Pues, dejenme convencerles.

Aparte de que es libre de crueldad, también es super saludable y obviamente delicioso. A mi me gusta disfrutarlo con galletas de linaza caseras (receta pronto), en pan y con pasta para darle un toque cremoso. 

Para resumir, este queso es:

QUESO DE CABRA VEGANO CON HIERBAS

Tiempo prep.:                   15 min
Tiempo esperar:               15 horas
Tiempo total:                    15h 15 min
 
​Rinde: 1 queso de 300g
Ingredientes
1 taza de nuez de la India (150g), remojados, drenados y enjuagados
1/2 taza de macadamia (50g), remojados, drenados y enjuagados
​80ml jugo de limon
3 cdas aceite de coco
2 cdas aceite de oliva
1 1/4 cdita pasta de miso
1 cda levadura nutricional
2 1/2 agua
1/2 cdita sal de mar
hierbas para decorar

Instrucciones
  1. Agrega todos los ingredientes excepto las hierbas a una licuadora o un procesador de alimentos y licúalo hasta que quedé cremoso. 
  2. Pon un colador adentro de un bol y toma una manta de queso o una bolsa de leche vegetal, ponla adentro del colador y empieza a vaciar la mezcla de queso adentro de la bolsa de leche vegetal. 
  3. Empieza a formar el queso en una barra esferica de 6 cm de diametro y dejalo colar a temperatura ambiente durante 12 horas.
  4. Luego ponlo al refrigerador para a lo menos 3 horas.
  5. Ahora sacalo de la bolsa de leche vegetal, ponlo a un plato y llenalo con hierbas de tu gusto.
  6. Disfruta con galletas de linaza casera, en pan o con pasta.
